You have picked a coffee, picked a grind, and now the shop asks one more question: light, medium or dark? It is easy to assume dark means stronger and light means weaker, and pick on that basis. That is not quite how it works. Roast changes flavour more than strength, and the right choice depends on how you drink your coffee.
What roasting does
Green coffee beans taste of very little. Roasting is what turns them into coffee. Heat drives out moisture, browns the sugars inside the bean, and builds the flavours you recognise.
The longer and hotter the roast, the more of the bean's own character is replaced by flavours from the roasting itself.
- A light roast keeps more of what the coffee tastes like on its own: fruit, acidity and the character of where it was grown.
- A dark roast tastes more of the roast: bitter, smoky, roasted notes, with less acidity and less difference between one origin and another.
Medium sits in between.
Roast is a trade between the taste of the coffee and the taste of the roast - the darker you go, the more the roast wins.
How each one tastes
Light
Bright, lively and more acidic. Fruit flavours are at their clearest. The body is lighter. Brewed carefully and drunk black, a light roast can taste of orange, berries or stone fruit. Brewed badly, it can taste sour.
Medium
Balanced. Some of the coffee's own flavour, some sweetness from the roast, a fuller body, and less sharpness. Medium is the safest starting point for almost any coffee.
Medium Dark
Deeper and more chocolatey, with a roasted edge. Acidity is lower. It stands up well to milk and sugar while still tasting of something more than just roast.
Dark
Bold, bitter and smoky, with heavy body and very little acidity. Most of the origin's character is gone. This is what many people picture when they think of "strong coffee".
Is dark roast stronger?
It tastes stronger, because bitterness and roasted flavour read as strength. But the caffeine difference between roasts is small. If you want a coffee that genuinely has more kick, the species matters more than the roast: Robusta generally has more caffeine than Arabica.
If you want your coffee to feel stronger, you can also simply use more of it. Our guide to the coffee-to-water ratio shows how.
How to choose
Think about how you drink coffee, not which roast sounds best.
- You drink it black and want to taste fruit: Light or Medium.
- You drink it black but do not like sourness: Medium.
- You add a splash of milk: Medium or Medium Dark.
- You drink it with a lot of milk, sugar or ice: Medium Dark or Dark.
- You use a moka pot or espresso: Medium Dark works well, as it stays sweet under pressure.
- You use pour-over or AeroPress: Light or Medium shows the most flavour.
Match the roast to the coffee
Some coffees suit some roasts better than others.
Bright coffees like Colombia and Ethiopia Sidamo have the most to lose from a dark roast. Their orange, plum and blackberry notes are the reason to buy them, so keep them Light or Medium.
Brazil Rio Minas is nutty and milk chocolate, and works across the board. Medium keeps it clear, Medium Dark makes it better with milk.
Vietnam is a Robusta, earthy, roasted and heavy. It already leans towards roasted flavours, so Medium Dark or Dark suits it, especially with condensed milk and ice.
Roast and Pakistani tastes
Many people in Pakistan come to coffee from chai, often strong, milky and sweet. If that is you, a Medium Dark roast is a natural first step. It feels familiar with milk and sugar, without being as bitter as a full dark roast. Once you know you like it, try a Medium of the same coffee black, side by side. You will taste the difference straight away.
Freshness matters at every roast
Whatever you choose, fresh coffee tastes better than stale. Lighter roasts keep their fruit longer when the bag is sealed and kept away from heat. Darker roasts go flat and oily faster, especially in Karachi humidity. Buy what you will use in a few weeks.
Start with Medium
If you are still not sure, choose Medium. It is the roast that gives the fairest picture of any coffee, and from there you can go lighter or darker next time. Every Steep coffee comes in Light, Medium, Medium Dark or Dark. For a coffee where roast makes a clear difference, try Colombia in Light or Medium, delivered across Pakistan with cash on delivery.
