The moka pot is in a lot of Pakistani kitchens. It is cheap, it sits on the stove, and it makes strong coffee without a machine. It also has a reputation for tasting bitter and metallic. That is rarely the pot's fault. Almost always it is too much heat for too long, and that is easy to fix.
How a moka pot actually works
A moka pot has three parts: a bottom chamber for water, a funnel basket for coffee, and a top chamber where the finished coffee collects. As the water heats, pressure pushes it up through the coffee and into the top.
The problem comes at the end. Once most of the water has gone through, the last of it bursts through as hot steam. That steam over-extracts the coffee and gives you the burnt, bitter edge people associate with moka pots. Most of the fixes below are about avoiding that final stage.
Five changes that remove the bitterness
- Start with hot water. Fill the bottom chamber with water just off the boil, not cold from the tap. The pot spends less time on the flame, so the coffee in the basket does not cook while it waits.
- Fill water to just below the valve. The small safety valve on the side marks the maximum. Do not cover it.
- Fill the basket level, but do not press it down. Tamping a moka pot packs the coffee too tight and makes it bitter. Tap the side to settle it, level it with your finger, and wipe the rim clean.
- Use a low to medium flame. A high flame rushes the brew and scorches it. On a gas stove, keep the flame smaller than the base of the pot.
- Take it off early. When the coffee coming out turns pale and starts to sputter, take the pot off the heat straight away. Run the base under cold water to stop the brew.
The moment the coffee turns pale and starts to gurgle, the good part is over - take it off the flame.
Use a cloth or oven glove when you handle the pot. The base will be very hot, and the steam pressure means you should never open it while it is on the stove.
Get the grind right
Moka pots want a fine grind, finer than drip coffee but not as powdery as espresso. Too coarse and the water rushes through, giving you a thin, sour cup. Too fine and the water struggles to get through, the pressure builds, and the result is harsh and bitter.
If you order ground coffee, choose fine for a moka pot. If you are unsure about grind sizes for other brewers, our post on choosing the right grind explains each one.
The right coffee for a moka pot
A moka pot gives a short, intense, heavy cup. That intensity magnifies whatever the coffee already is, so very bright, acidic coffees can come out sharp.
Coffees that are low in acid and naturally sweet suit it best. Brazil Rio Minas is nutty and milk chocolate, low in acid and happy in a moka pot. It is good black and better with milk, which makes it a natural fit for a homemade latte.
If you like your coffee very strong, Vietnam is a Robusta coffee: earthy, roasted and nutty. It is the heaviest coffee in the Steep range and it can take a lot of milk.
What about roast level?
Every Steep coffee can be ordered in Light, Medium, Medium Dark or Dark roast. For a moka pot, Medium or Medium Dark is a good starting point. A very dark roast in a moka pot can push towards bitterness, because the pot already brings out the roasty side of a coffee.
Making milk drinks with a moka pot
Moka coffee is strong enough to stand up to milk, so it is a good base for a latte or a cappuccino-style drink at home.
- Brew a full pot as above.
- Heat milk in a pan until steaming, but not boiling.
- Whisk it hard, or shake it in a sealed jar, to add some froth.
- Pour the coffee into a mug and add the milk.
If you are used to doodh patti, this will feel familiar: strong, milky and comforting, just with coffee in place of tea.
Keep the pot clean
Old coffee oils build up in the funnel and the filter plate and turn rancid, which adds its own bitterness. Rinse every part with hot water after each use and let it dry fully apart. Avoid soap on aluminium pots, and never put them in the dishwasher.
Your next pot
Try hot water, a low flame and taking it off early. Those three changes alone fix most bitter moka pot coffee. If you want a coffee chosen for it, order Brazil Rio Minas ground fine for a moka pot, delivered across Pakistan with cash on delivery.
